Roasted Duckling with Sherry

Ingredients

3 lbRaw Duck

1/2 tspTable Salt

1/2 tspCelery Seed

1/4 tspCurry Powder

1/4 tspBlack Pepper

1/4 cupCelery

1/2 cupOnions

1/2 cupDessert Wine, dry
Directions
1. Place duckling in a large dutch oven, breast up.2. In a small bowl, mix together salt, celery seed, curry powder, and pepper.
3. Rub into skin of duckling. Let marinate 1 hour.
4. Preheat oven to 300º F.
5. Add celery and onion to dutch oven. Pour in the sherry.
6. Place dutch oven over medium-high heat. Brown duckling on both sides, about 20 minutes per side.
7. Cover dutch oven and bake for 1 hour. Slice and serve.
8. Suggested to serve with rice and vegetables.
