Roasted Duckling with Sherry

Ingredients

  • 3 lb 
    Raw Duck
  • 1/2 tsp 
    Table Salt
  • 1/2 tsp 
    Celery Seed
  • 1/4 tsp 
    Curry Powder
  • 1/4 tsp 
    Black Pepper
  • 1/4 cup 
    Celery
  • 1/2 cup 
    Onions
  • 1/2 cup 
    Dessert Wine, dry

Directions

1. Place duckling in a large dutch oven, breast up.

2. In a small bowl, mix together salt, celery seed, curry powder, and pepper.

3. Rub into skin of duckling. Let marinate 1 hour.

4. Preheat oven to 300º F.

5. Add celery and onion to dutch oven. Pour in the sherry.

6. Place dutch oven over medium-high heat. Brown duckling on both sides, about 20 minutes per side.

7. Cover dutch oven and bake for 1 hour. Slice and serve.

8. Suggested to serve with rice and vegetables.
